( Unleavened Whole-Wheat Flour, Puffed Bread )

 

Puri (Unleavened whole-wheat fried, puffed bread

Ingredients:
1 ¼ cups Whole-wheat flour (atta)
Salt to taste
2 tsp Vegetable oil
½ cup Water
Vegetable oil for deep-frying
 

Method:
  1. Sift the whole-wheat flour and salt together. Add oil and mix well.
  2. Make a well in the flour mixture, add cold water and knead into hard dough.
  3. Divide the dough into 25 equal-sized balls and place them on a lightly floured surface. Cover with a kitchen cloth for 5-10 minutes.
  4. Flatten each ball between the palms to make a disc, 4.5cm in diameter. Roll out each of them to form a 10cm disc.
  5. Heat the oil in a work (kadhai); deep-fry the discs until they puff up. Remove and drain on paper towels. Serve hot.
