| Breads are an integral part of any Indian meal. Most traditional Indian breads are unleavened, that is they do not contain any raising agent, and are made with ground whole meal flour, known as chapatti flour or ata. Some are dry-cooked on a griddle, some are fried with a little oil, and others are deep-fried to make small savory puffs. To enjoy Indian breads at their best they should be made just before a meal and eaten hot. | |||||||
