Tomato Chicken

Ingredients
1 kg Boneless Chicken
2 tbsp Tomato paste
3 Tomato (peeled and finely chopped)
1 inch piece Fresh grated ginger
3 cloves Crushed garlic
3 tbsp Lime juice
1 tbsp Sugar
1 tbsp Garam masala
2 tbsp Light soy sauce
2 tbsp Chili sauce
 

Method:
  1. Make 2-3 deep cuts in the chicken thighs. Place them in a glass shallow dish. Grind the tomatoes, tomato paste, sugar, chili sauce, soy sauce, ginger, garlic and lime juice to make a smooth mixture. Pour this over the chicken pieces. Refrigerate for 3 hrs.
  2. Preheat the oven to 375°F. Arrange the marinated chicken pieces in an ovenproof roasting tray and pour the marinate over them.
  3. Cook for about 45 minutes or until the chicken is tender. Serve hot.
