Khajoor-Kishmish Chutney
(Date and raising chutney)

Ingredients:
500 gm Date (Khajoor), destined, cut into strips
1 cup Raisins (kishmish), washed, soaked in hot water
3 Tamarind (imli), lemon-sized balls
1 ¼ cups Jaggery (gur)
2 cups Water
Salt to taste
1 tsp Red chili powder
½ tbsp Cumin (jeera) seeds, roasted, powdered
1 tsp Ginger powder (sonth)
 

Method:
  1. Soak the tamarind and jaggery in water for 30 minutes. Mash the soaked tamarind well and strain removing all the pulp.
  2. Add salt, red chili powder, cumin powder, and ginger powder to the tamarind mixture. Mix well.
  3. Add the dates and drained raising; mix well.
  4. Let it rest for 30 minutes before serving.
