Ambakalio
( Mango Cooked in Jaggery )

Ingredients:
1 Mango, large, peeled, sliced
3 tbsp Ghee / Butter
1 Cinnamon (dalchini), 1” stick
4-6 Cloves (laung)
4-6 Green cardamom (choti elaichi)
6 ¼ tsp Jaggery (gur)
2 Green coriander (hara dhaniya), chopped
½ tsp Salt
½ cup Water
 

Method:
  1. Heat the ghee / butter in a pan; add onion, cinnamon stick, cloves and green cardamom. Sauté till light brown.
     
  2. Add jaggery, mango, green chillies, green coriander, salt and water: simmer for 1-2 minutes and mix gently without breaking the mango slices.
     
  3. Serve with dhansak.
