Spicy Mango Chutney

Ingredients:
3 large sweet mangoes, slightly ripened
6 tsp cooking oil
1/2" piece ginger, minced finely
10 green chilies
1 tsp coriander seeds
1 tsp cumin seeds
1/2 tsp fennel seeds
1 tsp lemon juice
1 tsp lemon rind, minced finely
l/4 tsp methi (fenugreek) seeds
1 tsp mustard seeds
A pinch of hing (asafetida)
Salt to taste
 

Method:
  1. Wash and peel the mango and then cut into small pieces. Heat up the pan with 2 tsp of oil, fry the chopped mango until it turns mushy. Set aside.
  2. Grind the cumin seeds, methi seeds and coriander seeds into coarsely powder. Set aside.
  3. Heat up the pan again with the remaining oil, add mustard and hing. Fry until the mustard splutter, add green chilies and ginger, sauté for 3 minutes. Pour in the mushy mango, powdered masala, lime rinds, lime juice and salt to taste. Turn to low heat and boil for a while.
  4. Remove from heat, when it cools down store in an airtight container. Keep in to refrigerator.
