Spicy Mango Chutney
Ingredients:
3 large sweet mangoes, slightly ripened
6 tsp cooking oil
1/2" piece ginger, minced finely
10 green chilies
1 tsp coriander seeds
1 tsp cumin seeds
1/2 tsp fennel seeds
1 tsp lemon juice
1 tsp lemon rind, minced finely
l/4 tsp methi (fenugreek) seeds
1 tsp mustard seeds
A pinch of hing (asafetida)
Salt to taste

Method:
- Wash and peel the mango and then cut into small
pieces. Heat up the pan with 2 tsp of oil, fry the chopped mango until
it turns mushy. Set aside.
- Grind the cumin seeds, methi seeds and
coriander seeds into coarsely powder. Set aside.
- Heat up the pan again with the remaining oil,
add mustard and hing. Fry until the mustard splutter, add green chilies
and ginger, sauté for 3 minutes. Pour in the mushy mango, powdered
masala, lime rinds, lime juice and salt to taste. Turn to low heat and
boil for a while.
- Remove from heat, when it cools down store in
an airtight container. Keep in to refrigerator.
