Dry Mutton with Drumsticks

Ingredients:
1kg lean boneless mutton (cut into small cubes)
6-8 small onions
6 cloves garlic
4cm piece ginger
3 tbsp meat curry powder
1 tbsp chili powder
3-4 drumsticks, skinned and cut into 4cm lengths
3 tbsp oil or ghee
1 tsp mustard seeds
2cm piece cinnamon
2-3 cloves
2-3 cardamoms
1 spring curry leaves
Salt to taste
½ cup plain yoghurt
Method:
  1. Place mutton cubes in a saucepan, cover with cold water and bring to the boil. Then simmer until mutton becomes tender.
  2. Grind together the onions, garlic and ginger. Add this to the boiling mutton.
  3. Then add in the curry powder and chili powder and drumsticks. Cover and cook on low heat till drumsticks soften.
  4. Heat oil or ghee in a pan, fry the mustard seeds, cinnamon, cloves, cardamoms and curry leaves till fragrant.
  5. Remove from heat and add this mixture to the mutton and drumsticks.
  6. Add salt and yoghurt and cook on low until gravy dries
