Indian Lamb with Spinach (Lamb Saag)

Ingredients
1 lb lamb (1-inch cubes)
1 large onion (finely chopped)
4 tsp ground coriander
1 tsp chili powder
1 tsp turmeric
1 tbsp mustard seeds
2 tsp ground cumin
1/4 cup plain yogurt
3 garlic cloves (crushed)
2 lbs fresh spinach (washed and chopped pieces)
1 inch fresh ginger (finely chopped)
1/4 tsp salt
1/2 tbsp vegetable oil
 

Method:
  1. Toss the chopped onion, coriander, lamb cubes, cumin, mustard seeds, turmeric and chili powder into a casserole and cook with medium heat. Stir all these ingredients well for 2-3 minutes then add ¼ cup of yogurt, turns heat to high and stir for another 2-3 minutes. Add ginger and garlic then cover the casserole, lower the heat and simmer for an hour.
  2. Until the meat is cooked, increase to medium heat and add spinach, add salt after 5 minutes.
  3. Serve hot with rice.
