Peshawari Kebab ( Succulent lamb coated with papaya and yoghurt )

Ingredients

1kg Lamb, cut into 1” cubes

For the marinade:
½ cup Yoghurt (dahi)
2 tsp Raw papaya paste
Salt to taste
2 tsp Red Chili powder
1 tsp Garam masala
1 tsp Black cumin (shahi jeera) seeds
1 tbsp Ginger (adrak) paste
1 tsp Garlic (lasan) paste

Ghee for basting:
1tsp Chaat masala
1 Juice of lemon (nimbu)
 

Method:
  1. For the marinade, mix all the ingredients and rub well into the lamb. Leave aside for an hour.
  2. Skewer the meat pieces and cook in a tandoor till half done.
  3. Remove and leave to cool for 10 minutes.
  4. Baste with ghee and cook for 8 more minutes.
  5. Sprinkle with chaat masala and lemon juice serve hot with a green salad.
