Sag Gosht (Lamb and Spinach)

Ingredients:
4 tbsp Ghee
1.5 tbsp Mustard Seeds
3 Garlic cloves (crushed)
2.5 lb Spinach, trimmed (chopped)
2.5 lb Lean boned lamb (cubed)
1.5 tbsp Ground Coriander
2 tsp Cardamom seeds (crushed)
1.5 inches Fresh root ginger (peeled and chopped)
1 Medium Onion (chopped)
2 Green Chilies (chopped)
3 tbsp Yogurt
1 tsp Turmeric
1 tsp Sugar
1.5 tsp Salt
0.5 tsp Black Pepper

 

Method:
  1. Head up pan with oil, toss in cardamom, garlic, ginger and coriander seeds, fry and stir until seeds begin to pop.
  2. Get the lamb cubes and add in to fry until it turns browned, and then add in chilies, onions and sugar. Continue stirring until onions turn golden brown. Pour in remaining ingredients and reduce heat and simmer for an hour until the meat is cooked.
  3. Serve hot
