- The fish is marinated in a coriander-based
green sauce with green chilies and mint and then steamed. This dish
is thus very healthy.

Patrani Machi (Parsi Baked/Steamed Fish)
Ingredients:
2 large pieces lemon sole, cut into 5cm x 5 cm pieces
Salt to taste
2 tsp black pepper
Juice of 2 sour limes
10-12 large pieces banana leaves,
softened by fire or scalded in hot water
Cooking oil/ghee
Chutney marinade: (grind together)
½ grated coconut
10 cloves garlic
2.5cm fresh ginger
7 green chilies
1 tsp cumin seeds
1 tbsp mint leaves, chopped
2 cups coriander leaves, washed & chopped
½ tsp black pepper powder
Salt to taste
Juice of 2 sour limes
1-1½ tbsp sugar |
Method:
- Wash the fish thoroughly. Marinate for ½
hour in salt, black pepper and lime juice.
- Grind all the chutney marinade ingredients
till you get a very fine and smooth paste. Add sugar and lime juice
last, mix well.
- Grease the banana leaves with melted ghee.
Coat the fish liberally with the ground green chutney, back and
front. Dribble with oil/ghee. Wrap the banana leaves carefully and
secure with toothpicks or tie with a thread.
- You can either steam the fish for 5-10
minutes until the banana leaf turns color or it can be baked in a
hot oven (wrapped in aluminum foil) for 10-15 minutes.
- Serve immediately. It is usual to serve the
fish in the leaf and each person unwraps her own serving.
