Ingredients 1½ lb chopped onion
2 lb runner beans after trimming & slicing
1½ oz corn flour
1½ pt malt vinegar
1 heaped tsp mustard powder
1 rounded tbsp turmeric
1 lb demerara sugar
8 oz soft brown sugar
Method:
Toss the chopped onions into a pan and add some
vinegar on it. Simmer for 20 minutes until the onions are soft.
Meanwhile cook the beans (sliced) with boiling
water and salt to taste. Add in the ready cooked onions.
In the other side mix the corn flour, turmeric
and mustard powder with some vinegar and make a paste. Pour in the
remaining of vinegar and add to boil and simmer with the mixture for 10
minutes.
Add both sugars and stir to dissolve and simmer
again for another 10 to 15 minutes.
