Raita

Ingredients:
2 cups plain yoghurt
1tbsp roasted cumin powder
Salt and black pepper to taste
Sugar to taste

To make one cup:
Cucumber, cut finely
Bombay onion, diced finely
Carrot, grated
Radish, grated
Tomato, seeded & cut finely

Method:
  1. Dry roast the cumin seeds in a pan on moderate heat till just brown, (do not darken them too much). Then either grind roughly with a rolling pin, cool and grind coarsely in a blender or pound un mortar with a pestle.
  2. Prepare vegetables as directed but dice a little carrot, cucumber and tomato for garnishing.
  3. Whisk the yoghurt, cumin powder, salt, black pepper and sugar together. Adjust seasoning accordingly.
  4. Add the cupful of vegetables and mix well. Garnish with a spoonful of diced vegetables and cumin powder scattered on top.
