Raita
Ingredients:
2 cups plain yoghurt
1tbsp roasted cumin powder
Salt and black pepper to taste
Sugar to taste
To make one cup:
Cucumber, cut finely
Bombay onion, diced finely
Carrot, grated
Radish, grated
Tomato, seeded & cut finely

Method:
- Dry roast the cumin seeds in a pan on
moderate heat till just brown, (do not darken them too much). Then
either grind roughly with a rolling pin, cool and grind coarsely in
a blender or pound un mortar with a pestle.
- Prepare vegetables as directed but dice a
little carrot, cucumber and tomato for garnishing.
- Whisk the yoghurt, cumin powder, salt,
black pepper and sugar together. Adjust seasoning accordingly.
- Add the cupful of vegetables and mix well.
Garnish with a spoonful of diced vegetables and cumin powder
scattered on top.
