Large Na Tarkari Per Eda
( Egg yolks on spicy tomato mixture )


Ingredients
8 Eggs
5 tbsp Vegetable oil
1 tsp Ginger-garlic (adrak-lasan) paste
4 Green chilies, deseeded finely chopped
3 Tomatoes, large, skinned , deseeded
˝ cup Green coriander (haradhaniya) , cleaned, washed, finely chopped
1 tbsp Vinegar (sirka)
˝ tsp Red chili powder
˝ tsp Garam masala
Salt to taste
3 Onions, sliced, deep-fried


Method:
  1. Heat the oil in a large heave-bottomed pan; add ginger –garlic paste and sauté on medium heat for 2 minutes.
  2. Add green chilies, tomatoes, green coriander, vinegar, red chili powder and garam masala. Cook till the tomatoes turn soft. Mix in the salt and fried onions.
  3. Flatten the mixture evenly and make 8 depressions in the mixture. Lower heat.
  4. Break each egg separately in a saucer and slip it in a depression. Repeat till all the depressions are covered with egg yolks. Sprinkle lightly with salt.
  5. Cook covered till the yolks are done. Do not allow eggs to become hard. Serve immediately.
