Coconut Rice

Ingredients
1 cup Rice
1 Onion (chopped)
1 piece Cinnamon
2 Bay leaves
1 Green cardamom
10 whole cloves Garlic (peeled)
4 Green chilies (cut lengthwise)
1 ½ cups freshly made Coconut milk or tinned coconut milk
2 tbsp Dalda
4 tbsp Oil
Salt
 

Method:
  1. Heat dalda and oil in a pan and add the onions, garlic & green chilies and fry until the onions are soft. Then add rice and fry for a few minutes.
  2. Transfer this to a pressure cooker. Add salt, 1 1/2 cups of coconut milk and 1/2 cup of water. Mix well. Let it cook for about 30 minutes or until the rice is done.
