| Method:
Fry onions, celery, carrots and garlic in olive oil
until the onions are translucent. Add the pepper flakes and a pinch of
salt and fry for 15 seconds. Add the green beans and the black-eyed peas,
more salt and plenty of water. When green beans are cooked, add zucchini,
spinach and mashed tomatoes. After 1 min, add the parsley and warm it
through. Serve very hot and garnish with grated parmesan cheese. |
