Tamater Nariyal Ka Shorba ( Tomato soup flavored with coconut )
Ingredients
500 gm Tomatoes, chopped
˝ cup Coconut (nariyal), grated
3 tbsp Coconut oil
2 tsp Garlic (lasan), chopped
3 ˝ tbsp Onions, chopped
1 tbsp Ginger (adrak), crushed
Salt to taste
˝ tsp White pepper (safed mirch) powder
4 Bay leaves (tej patta)
6 cups *Vegetable stock
2 tbsp Cream

Method:
- Heat the coconut oil in a pot; sauté garlic and
onions for a few seconds.
- Add the coconut and stir-fry. Add tomatoes and
ginger.
- Stir in the salt, white pepper powder, bay
leaves, and vegetable stock. Simmer for 15 – 20 minutes till the
tomatoes are cooked and tender. Remove from heat and keep aside to cool.
- Blend the mixture, strain through a muslin
cloth and reheat. Remove from heat and stir in the cream.
- Pour into individual soup bowls and serve
immediately.
Serves: 4
*Vegetable stock: Combine 4
carrots (gajar), washed and scrubbed; 8 whole spring onions (hara pyaz);
6 outer lettuce leaves, 1 tsp salt, and 4 cups / 1 lt / 32 fl oz water
together. Bring the mixture to the boil. Cover, lower heat and simmer
for 30 minutes. Strain the stock through a muslin cloth and use as
required. |
