Brinjal Roast

Ingredients:
1/2 kg Brinjal
1/2 tsp Mustard seeds
1/4 kg Onions
1/2 tsp Red chili powder
5 tsp Oil
1/2 tsp Urad dal
Salt to taste
 
Method:
  1. Wash and cut onions and brinjal into few slices.
  2. Heat up pan with oil. Fry mustard seeds until it splutters, add urad dal and fry till a bit roast, add in the slices of onions and brinjals fry for a while then follow by red chili powder and salt to taste. Sauté constantly till onions and brinjals turn soft and tender.
  3. Serve hot
