Vegetable Kurma

Ingredients
1 cup Mixed Vegetables (carrot, beans, potatoes, green peas)
1/2 inch piece Ginger (crushed)
3 flakes Garlic (crushed)
2 Onions (chopped)
2 Tomatoes (chopped)
7 Green chilies
1/4 tsp Turmeric Powder
1/4 tsp Coriander seeds
1 cup Grated Coconut
1 inch piece Cinnamon
2 Cloves
1/4 tsp Fennel seeds
1/2 tsp Black pepper
Salt
2 tbsp Oil
Chopped coriander leaves (cilantro)
 
Method:
  1. Heat little oil and fry the coriander seeds, fennel seeds, black pepper & cloves. Grind this into a smooth paste with coconut and tomatoes in 2 cups of water.
  2. Heat oil in a pan and add cinnamon, ginger and garlic. Fry for few seconds. Then add onions & all the other vegetables, turmeric and salt. Pour water until all the vegetables are covered. Boil until the vegetables are cooked. Then add the ground coconut mixture. Let it boil for 15 minutes or until the raw smell vanishes.
  3. Garnish with chopped coriander leaves.
